Cooking grease does not stay near the cooker. Heated fat leaves the pan as a fine aerosol, rides the convection currents of the room and settles wherever the air slows down — on the top of wall units, on the ceiling, on the cord of a pendant light, on the upper face of a picture frame two rooms away in an open-plan flat. By the end of a two-year tenancy in E8 that film is measurable, and it is the reason kitchens take longer than any other room.
Why detergent alone does not shift it
Aged cooking residue is not simply oily. Repeated heating partially polymerises it, and it binds airborne dust into a lacquer that is tacky to the touch and resists water entirely. Removing it needs an alkaline degreaser with genuine contact time, mechanical agitation with a non-scratch pad, and then a rinse, because leaving surfactant behind produces a surface that feels clean and attracts dirt again within days. Rushing the dwell time is the single most common reason a kitchen is marked down.
Extraction hoods, filters and the cartridge that cannot be washed
A cooker hood carries metal mesh filters that need removing and soaking rather than wiping, and in recirculating hoods a carbon cartridge sits behind them which is not washable at all and is simply replaced. The housing above the filters, the fan scroll and the underside of the canopy are where the worst of it accumulates. Ducted hoods vent through the wall, and the external grille collects a greasy mat that is visible from the street and rarely on anybody's list.
Tiles, grout and cabinet doors
Splashback grout absorbs fat and darkens unevenly, which reads as staining rather than dirt. It responds to a degreaser worked with a grout brush along the joint, not to a general wipe across the tiles. Cabinet doors near the hob develop a sticky bloom in the routed detail and along the top edge where fingers never go but vapour does, and handles collect a black line on the underside. All of it comes off; none of it comes off quickly.
Steam and chemistry do different jobs
Steam is excellent at softening deposit in a joint, a track or a grout line, and poor at removing the residue it loosens, which then runs and dries somewhere else. Degreaser lifts and holds the soil so it can be taken away on a cloth. Used together, in that order, with the loosened material removed rather than chased around, they deal with a kitchen that has defeated several previous attempts. Used carelessly, steam drives moisture into a cabinet carcass and swells the chipboard.
Where the moisture from cooking ends up
Boiling and frying put a great deal of water into the air, and in a flat with a small window and a tired extractor it condenses on the coldest surface available — commonly the reveal beside the kitchen window, a corner of an external wall, or the ceiling of a bathroom next door. Clearing the flat before the work starts
Kitchen units cannot be cleaned round a stack of boxes, and appliances need to come forward.
